Pepperoni Pizza Bites

Pepperoni Pizza Bites Recipe from Skinny Taste.

Serving size: 16 bites

Ingredients

  • Olive oil spray
  • 1 cup unbleached all-purpose flour, whole wheat or gluten-free mix
  • 2 teaspoons baking powder
  • 3/4 teaspoon kosher salt (use less if using table salt)
  • 1 cup non-fat Greek yogurt
  • 2/3 cup marinara or pizza sauce
  • 1 cup shredded part-skim mozzarella cheese
  • 1 ounce turkey pepperoni, chopped
  • Crushed red pepper flakes, for serving (optional)

Directions

  1. Preheat oven to 375°F and spray two 12-cup muffin pans.
  2. Combine flour, baking powder, and salt in a bowl.
  3. Add yogurt and mix until well combined. It will look crumbly.
  4. Lightly flour a work surface and knead the dough a few times until the dough is only slightly tacky.
  5. Divide the dough into 16 equal balls and press each into the muffin cups, allowing it to slightly up the sides.
  6. Bake for 15 minutes, remove from oven, and press down slightly in the middle to create a cup.
  7. Top each cup with 2 teaspoons of sauce, 1 tablespoon of cheese and pepperoni.
  8. Put the tins back in the oven and bake for another 3 minutes, until the cheese is melted.
  9. Remove from the oven and allow to cool for 2 minutes.
  10. Serve warm with ranch or your choice of dipping sauce. Enjoy!
